INGREDIENTS:
400 g Raw King Prawns
1 1/2 tsp Cornflour
5 tbsp Vegetable Oil
4 Cloves of Garlic
1 Red Chilli
1/4 tsp Salt
STEP 1: CUT PRAWNS
Use a small knife to cut down the back of each prawn to half its thickness. Put into a bowl and add the cornflour, but do not stir it in.
STEP 2: GARLIC AND CHILLI
Heat the oil over a low heat and stir-fry the garlic and chilli until the oil is fragrant and the garlic has just started to turn a golden brown colour. Immediately take the wok off the heat and remove the garlic and chilli, leaving any extra oil in the wok. Be sure to remove as much of the garlic as possible so it doesn't burn during the next stage.
STEP 3: PRAWNS, FINISH AND SERVE
Gently stir the corn flour into the prawns. Reheat the wok with the leftover oil over a high heat until it is smoking hot. Put the prawns in the wok in a single layer and fry until golden brown underneath. Flip each prawn over and sear for another 30 seconds, then add the salt and quickly stir-fry until the flesh just loses its transparency. Return the garlic and chilli to the wok and toss to coat, and serve.
