Funfetti Cupcake Recipe:
- 1/2 cup softened unsalted butter
- 1/2 cup + 2 tbsp sugar
- 2 eggs
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 2 tbsp sprinkles (confetti)
- 2 tbsp milk
Directions:
Beat the butter until creamy, then mix in the sugar until fluffy. Add eggs one at a time, mixing between each addition. Then add vanilla extract and continue to mix. Then add flour, baking powder, baking soda, and salt. Mix until combined. Then add the sprinkles and milk. Scoop the batter about 2/3 of the way full into some cupcake liners and bake at 340F or 170C for 18-20 minutes! Let them completely cool before frosting them.
Swiss Meringue Buttercream Recipe:
- 4 egg whites
- 1 cup sugar
- 2 sticks softened unsalted butter (I ended up using 1 1/2 sticks)
- 1 tsp vanilla extract
Directions:
Mix egg whites and sugar in a heat proof bowl. Place the bowl over a bain marie (a saucepan with an inch of simmering water, make sure the bowl doesn't touch the water). Continuously stir until all the sugar is completely dissolved, or reaches 160 degrees F (this is to ensure that the egg whites are cooked and safe to consume). Then take the bowl off the heat and use your stand mixer (or hand mixer, but it'll take a lot of power) and beat it on high for about 10 minutes until the bowl cools down and the meringue has stiff, glossy peaks. Then add the softened butter a tbsp at a time. I ended up using 3/4 cup of butter because I found that it would be too buttery if I added all of it. Don't be afraid if it starts to curdle and continue beating and add food coloring and vanilla. Once it is a smooth, fluffy frosting it is ready to use!
