What’s a first course I can serve to stay cool in the summer? Betty Crocker’s Answer? Frozen Salads.

Two frozen salad recipes, one sweet and one savory, both easy to make and will cool you down quickly. The Frosty Fruit Salad is a mix of canned fruit, marshmallows, sour cream and Neufchatel cheese, and when served in individual jello molds is a cute refreshing retro dessert! The Lemon-Blue Cheese Ice is a bit more wacky for today’s taste palette: with lemon sherbet and blue cheese crumbles, served with marinated artichokes, it sure does pack a punch.

We also explore how frozen salads exemplify the dainty food trend at the turn of the century, and how refrigerator manufacturers pushed recipes like this as a way to show wealth and status to guests.

Happy Homemaking!
