Fried Rice is a Chinese food classic. It's so easy to make and is a nice upgrade from plain white rice when you're having Chinese food for dinner. This one is a vegetable version but you can add chicken or shrimp if you'd like!

Vegetable Fried Rice Recipe:

Yield: Serves 4 as a side dish

Ingredients:
2 tbsp grapeseed or vegetable oil
1 carrot, chopped (heaping ⅓ cup)
½ small yellow onion, chopped (heaping ½ cup)
1/4 cup peas (I used frozen)
1 tsp + 1 tbsp soy sauce
4 cups cooked rice, preferably a day or two old
2 eggs, whisked with 1 tsp soy sauce
4 scallions, sliced
1 tsp sesame oil

Directions:
In a very large frying pan or wok, heat 1 tbsp of oil over high heat until it’s almost smoking. Add the carrots, onion, and peas. Toss frequently and cook for 4 minutes. Season with 1 tsp of soy sauce. Remove from the pan.

Add the other tablespoon of oil to the pan and add the rice. Cook for a few minutes, frying the rice and trying to break up any clumps with your spatula. Make a well in the center and add the eggs. Let sit for a minute so big pieces of egg can form, then scramble and break into bits.

Add all the veggies back, then add 1 tbsp soy sauce, the sesame oil, and scallions. Cook for 4 minutes until heated through. Enjoy!
