Chi Sau is known as "sticky hands" because the two players seek eachothers limb contact INSTEAD of striking towards combat targets. Many of teh shapes do have a punch or elbow, or knife hand chop, so those are "stop on contact" and the flow cycle continues.
Wun Chi Sau in WT is shape changing chi sau, which we are doing here at 80% speed and with a few inches of extra distance for knees and elbows. No gloves or gear here, just skill. Kou Chi Sau is shape fighting chi sau, which does seek to fill targets and land contacts and grapples, but it is still under control and with no intent to hurt on contact.
Chi Sau is to give your partner good attacks so they can form defenses and counter attack. Their counter is also a good attack to flow back at you, creating a flow cycle. Everyone wins, no one is a losser. We cant chi sau and make our partner submit. That is a different exercise. It should be a flow cycle with very tight geometry. The rate of changing shapes is equal to the needs for fighting, the reaction time demands, the pressure loading on contacts, but ZERO INJURY is also a requirement.
The geometry and timing are the same for Lat Sau, Free Fighting.
