💣💣 FLAVOR BOMB BARBACOA!! 💣💣
Not traditional barbacoa, but barbacoa in the INSTANT POT or any electric pressure cooker.
I call it a flavor bomb barbacoa because the meat has so much flavor and by simmering the sauce in the end, it becomes very concentrated. I like to pour it over the meat just before serving.
It's flexible in its flavor too - try spicy beer, or add a serrano or poblano pepper, more chipotles if you want.
What do I do with Flavor Bomb Barbacoa???
Well, stuff that in tacos, wet burritos, over nachos, with rice, taquitos, omelets, beef stuffed potatoes, or shepherd's pie. The possibilities are endless, but my favorite is tacos with chopped onion and cilantro.
