You face three trials -- two summons at the same time for each trial. You'll want Tifa or Cait Sith as a team member; since they have the ability to increase the stagger bonus and this makes elimination quicker (I've tried with max-magic Aerith, but she takes too long to take them down, while Tifa can hit 9999 max damage with a simple Dive Kick, with a single ATB charge).
Odin & Alexander - you want to take out Odin first, while keeping an eye on Alexander's incoming attacks. Tracking Beam and Earth Tremor are the main attacks to watch out for. Odin will Vanish from the battle after the first stagger, so if you can eliminate him before then, it's ideal, so you won't have to face him again when he reappears. As for Alexander, you will want to try to take out both arms at the same time. If you damage a single arm too severely, Alexander will go nuts and spam lots of attacks together.
Phoenix & Kujata - the key to this fight is to have your Elemental materia upgraded. Pair with with Fire, and you won't have to worry about the Phoenix, especially if you maxed it out to Absorb. Take out Kujata first, and Phoenix will do Rebirth Flame which will revive Kujata. If you have Barret, you can pair the Elemental with Fire on him, and then use Lifesaver ability. In this video, Tifa gets hit with Rebirth Flame (20:40), but Barret takes that damage instead, and then gets healed by Rebirth Flame, so the total damage is nullifed (and Cloud get healed from the other Elemental). Just as long as your current health is high enough to withstand the hit (over 2000HP), it's not a problem. Oh, and if you think that using the Jump materia before Rebirth Flame might work to escape it, it will not work.
Titan & Bahamut Arisen - take out Titan first. Each Summon will be assigned to a different character, and hopefully your main is not targeted by Bahamut. Keep these two far away from each other, as Bahamut can do widespread area damage. When it's time to stagger, teleport Tifa with a Synergy Skill to get her into place.
Gilgamesh - if you have Ribbon, you might want to equip it. But if you are careful, you won't need it. Destroy the Genji Shield with Fire or Fira or whatever you like. Gilgamesh has a way to chip away at your party's health, so Regen and Manaward is useful.
