When you are looking forward to a nice roast but are running short of time-fillet! This not only reduces cooking time but allows penetration of flavourings. Here some Teriyaki sauce is used. PS it was ready in an hour and was wonderful. And I did eat the meat off the bone, there wasn't more than 2 ounces maximum. Filleting a leg of lamb (actally this was half a leg) is not wasteful, quite the reverse.
PS if you are ever travelling through South Wales, H J Edwards butchers at Abergavenny makes the best steak and kidney pies in the known world. Their pork and apricot pies are outstanding also. And yes I know that on the whole I've eaten too many pies, but I am dieting.
