Fat Is Back — Why Dairy’s Best Days Might Be Ahead of Us  @DamianMasonChannel

I’m coming to you from a dairy conference, and one thing is clear: the fear of fat is finally fading. For decades, bad nutrition science pushed Americans away from whole milk, butter, and real dairy. That mindset peaked when Michelle Obama helped change school lunch standards and kicked whole milk out of cafeterias.

Now? That’s changing.

Whole milk is making its way back. Premium butter consumption is rising. Cheese consumption is holding strong at about 40 pounds per person per year. And in a world that’s questioning seed oils and ultra-processed food, real dairy suddenly fits the moment perfectly.

Consumers want food that’s familiar, functional, and real — not engineered in a lab. That’s a tailwind for dairy producers who understand where culture, nutrition, and demand are headed.

This isn’t hype. It’s history correcting itself.
