Italian roasted butternut squash
Cut the squash in half, remove seeds and skin; then place on parchment lined baking sheet.
Spread about 1 TBSP olive oil on the top then bake at 375 degrees for about 40-45 minutes
Remove from oven and use a spatula to place on your serving dish, then use a sharp knife to cut slits down the length of the squash then spread a TBSP or so of softened butter, salt, pepper and fresh thyme. Garnish with parsley or thyme sprigs
