Elk Meatloaf Ring
(Made with a Bundt pan and 12” Deep Camp Oven)
Ingredients:
2 lbs. ground elk
½ cup minced onions
1 tsp. mustard
2 eggs beaten
1 tsp. salt (or less)
½ cup catsup
¼ tsp. white or black pepper
½ - 1 cup seasoned bread crumbs
½ cup sliced mushrooms (optional)
Note: Variations of ground meat can be used, as well as a regular baking pan
Directions:
1. Pour catsup into a well greased ring mold/Bundt pan.
2. Combine remaining ingredients in a bowl and mix well.
3. Fill this mixture into the ring mold and bake at 350°F for 1 hour.
(Finished meatloaf center may be filled with creamed mushrooms or vegetables)
