For Draconic Tree Sentinel I would try to carefully stagger him as much as possible. And don't hit him when he is in stagger rather as soon as he gets out of stagger as that damagae after stagger will count towards the next stagger. For his fireball attacks you have to be able to tell when he is gonna send a projectile forward rather than underneath him. He has a slightly different animation for when he shoots under his feet but yeah that can catch you like it did me at first. And try to beat him quickly when he goes to 2nd phase because second phase has some attacks that one shot so best to not to have to deal with that.
