INGREDIENTS
6 large eggs
2 Tbsp finely chopped onions
½ cup Shredded cheese
½ tsp garlic powder
Toppings include ¼-1/2 cup each of diced bell peppers, mushrooms, jalepeños, tomatoes, spinach, broccoli. You can also use fresh or dried herbs such as dill, parsley, or basil.
DIRECTIONS
1. Preheat oven to 350 degrees F
2. Spray muffin tin with non-stick spray
3. In a large bowl, whisk eggs, onions, cheese, garlic powder
4. Pour egg mixture halfway up muffin tins
5. Add toppings to each
6. Bake for 20 minutes
7. Let cool for about 5 minutes.
8. Use a butter knife to move around edges of the muffin tin (to get muffins out nicely).
9. Serve hot or store in refrigerator up to 3 days (reheat in microwave) or may freeze up to 2 months in an airtight container.
Makes 6 servings.
