No matter what your health goals are, everyone can benefit from starting the day off with breakfast. One of the biggest barriers to eating breakfast is not having enough time in the morning to prepare it. Spend a few minutes over the weekend prepping this easy oatmeal bake and you’ll be starting your day with an energy boost all week long.
INGREDIENTS
2 cups old-fashioned rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
¼ teaspoon salt
1 ½ cups milk of choice
2 eggs
2 tablespoons butter
2 tablespoons honey (or maple syrup)
1 teaspoon vanilla extract
1 small banana or ½ medium-large banana, chopped
1 cup strawberries, chopped
DIRECTIONS
1. Preheat oven to 400 degrees. Spray 8 x 8 baking dish with non-stick spray or grease with butter.
2. In a large bowl, combine the dry ingredients (oats, baking powder, cinnamon, nutmeg, and salt).
3. In another large bowl, combine the wet ingredients (milk, eggs, melted butter, and syrup). Whisk until combined.
4. Add the wet ingredients to the dry. Stir to combine. Stir in the strawberries and bananas.
5. Pour mixture into prepared baking dish. Bake for 45 minutes, or until set in the middle.
6. Cut into squares. Optional to top with a drizzle of honey, syrup, peanut butter, or Greek yogurt. Enjoy!
