Getting good at editing interviews to sound smooth and concise is absolutely one of the most profitable things you can get good at doing. I have been editing interviews for nearly 20 years. Sit in with me for 20min of real-world editing on preparing interviews for a master edit. I am using Premiere Pro in this example but this general approach can be used in any video editing program.
