Hello there and welcome back to Eat Me!
Today we are digging through the recipe graveyard to bring up a very interesting and tasty menu item from Dennys.
What other dead and gone recipes do you remember?
And what would you like to see let me know!
The biscuit recipe is from Americas test kitchen and their website is behind a paywall but I say it is worth it.........but
Combine 15 ounces of AP flour
2 TBSP white sugar
4 TSP baking powder
1 half TSP baking soda
2 sticks of butter frozen solid
grate them into the mix
Mix to combine and then make a well in the center
add 1 and one fourth cups of cold buttermilk and mix until it just barely starts coming together
turn out onto a heavily floured surface and combine and once formed
Roll out into a rectangle-ish shape and using a bench scraper fold in thirds over onto itself
Turn 90 degrees and repeat
Do that 5 times to give the biscuits flaky layers
Now wrap in plastic and let it rest in the fridge for at least
30 minutes
Once you are ready roll it out into a rectangle to about 1 half inch thick
Using a sharp knife cut the outsides to make it a even-ish rectangle
And cut down the middle and try to make them as even as possible once all cut lift up with bench scraper and dont touch the sides of the biscuits
Transfer to parchment paper on a baking sheet
Top with melted butter and coarse sea salt
Bake for 20-25 minutes in a preheated 400 degree oven
enjoy the perfection and support Americas test kitchen!
Gravy
Cook 1 LB of sausage (breakfast or italian) once fully cooked do not drain but add 1 TBSP of butter for the Roux
Then add 3 TBSP of AP Flour and mix until combined and cook for at least a minute to cook out the four taste
add a cup and a half of milk in batches and once combined cook for a few minutes until desired thickness
add preferred seasonings
Lots O Pepper, and some salt, paprika, cayenne, garlic and onion powder
Potatoes
Peel and grate one comically large russet potato, let it soak in water to remove the starch and then by any means necessary remove as much water as possible and then salt and let them sit for 10 minutes.
Toss in a few tablespoons of heated oil and cook on medium for about 15-20 min on each side but check so it doesn't burn
Chicken Fried Steak
grab your steak of preference (Any meat works) and slice it into smaller biscuit sized cuts and you are going to pound them thinner and then hit both sides with a meat tenderizer and trust me its worth it.
Next take flour with our seasonings, salt, pepper, garlic and onion powder, cayanne, and paprika and coat in our dry seasoing.
wet batter is 1 cup of buttermilk and 2 eggs whisked to combine .
Toss in wet and then dry again and directly into a hot skillet with only a small layer of oil, unless you want to deep fry it but 4-5 minutes on each side until crispy and delicious.
AND ASSEMBLE!
Biscuits
Chicken fried steak
2 eggs
Cheese
Sausage gravy
3 slices of bacon
Side of hash browns
Enjoy!! and make sure you clear your schedule because damn a nap is needed.
