Hello, welcome to EZ Eatery! With our weather being so wonky and quite hot here lately, I didn't want to spend a whole lot of time in the kitchen and the thought of something heavy to eat, was a bit unbearable. So, today I wanted to share with you a super easy tortellini pasta salad. It requires as many ingredients as you choose. I'm going to share with you the basics and I promise you, you will not be disappointed. It's delicious!
Tortellini Pasta Salad
Tortellini (I used frozen from Schwan's)
a bit of red onion
half a cucumber
2 mozzarella sticks
Olive Garden salad dressing
half red bell pepper
salami
grape tomatoes (halved)
olives
Boil your frozen tortellini for 3 minutes after it comes to the boiling point, or until they start to float. This goes for both frozen or fresh. Drain and place in cold water. Chop cucumber into 1/3 pieces and add to tortellini in a large bowl. Chop up half a red bell pepper into bite sized pieces. Add to bowl. Quarter the salami. Add to bowl. Keep tossing. Half tomatoes. Add to bowl. Slice up mozzarella sticks into bite sized pieces. Add to bowl. Sliver about a quarter onion into bite sized pieces. Add to bowl. Add about 1/4 to 1/2 cup Olive Garden salad dressing and stir it all up. Cover with saran wrap and let chill for at least one hour. The longer, the more the better. Or up to 3 days. That's it! Enjoy! This will feed at least 4 people.
