I like to make my own easy sourdough bread so I know what's in it. It's a sourdough, but by doing it this way, I explain more in the video why and how it doesn't become overly sour; to me, it's perfect.

Get the starter ready. Once you get the hang of this, it will go fast.

Once ready, for ONE bread, put 80-90 grams of starter in a bowl, 11 grams of salt, 375 ML of water, mix everything very well.

Then add 530 grams of Unbleached White flour and start mixing it.

Once it’s a good, solid mixed dough, leave it in the bowl for about 45 minutes, cover with a wet towel.
Clean up or read something in that time, no TV, learn something!

- First “stretch and fold”, cover for 30 min with a damped towel.
- Second, “stretch and fold”, then cover for 30 minutes with a damp towel.
- Third and final “stretch and fold”, cover with a damp towel and wait 30 min.

Grab a bowl, put a DRY towel in it, and throw some rice flour on the towel. Spread it out well with your fingers so the dough does not stick.

Throw some white flour on the table (so it doesn’t stick), and on that, the dough.

Fold the dough from all sides and transfer it into the bowl with the towel in it.

Fold the towel over the dough so it’s covered. When not totally covered, use a DRY towel as well and wait for about 2.5-3 hours.

Take the “baking bread loaf pan” (I use a 9.5 X 5-inch pan) and rub lightly with olive oil.

Take the dough out, fold it again from all sides, and transfer it into the “loaf pan”

Put a dry towel on top and now wait till it raises, I wait until it’s about an inch out of the pan, but you can do it sooner, it could take 6 hours, so time it well, you don’t want to leave it out for the night, I bake mine around 9PM at night. (bread ready at 9:40PM)

Heat the oven to 425 degrees, and once it reaches that temperature, place the pan in the oven.

Leave in for 20 min, turn the heat down to 375, and another 20 mi,n and you should be good.
