This recipe follows the four tastes of hot, sweet, sour & salty used in Thai cuisine. When you are creating your own sauce keep each of them in mind and adjust your sauce to YOUR liking.
HOT - Thai chilis, chili paste, Sriracha, hot sauce, fermented peppers, chili flakes
SWEET - palm sugar, brown sugar, maple sugar, treacle, maple syrup, pilloncillo
SOUR - lime juice, lemon juice, rice vinegar, apple cider vinegar, sherry vinegar, tamarind pulp
SALTY - fish sauce, soy sauce, shoyu, tamari [GF], sea salt
Base ingredients of peanut butter and coconut milk in equal parts for a thicker peanut sauce. For a thiner dressing add a little extra coconut milk.
ADD INS - sesame oil, ginger, cilantro, garlic, lime leaves, lemon grass, lime zest
