Easy Baked Sweet Potato Medallions  @MarlonDoll

Sweet potatoes are delicious and nutritious with complex carbs, and fiber. They’re also healthier for you than white potatoes. For this recipe we make Roasted Sweet Potato Medallions.

Recipe
- 4 Medium Sized Sweet Potatoes (About 5-6 Cups Washed and Chopped)
- 2 tbsp of Olive oil
- 1 tsp of Salt
- 1 tsp of chili flakes or cayenne
- 1 tsp smoked paprika
- 1 tsp of garlic powder

1. Preheat oven to 400 degrees Fahrenheit. While that is heating up, wash, scrub and remove any ugly bits from the Sweet potatoes. Slice into 1/2 inch rounds.

2. In a bowl, add olive oil and all spices. Toss and make sure everything is evenly coated. Then spread out on an aluminium foil lined baking tray. Cook for 30 minutes.

3. At the 30 minutes mark, remove medallions from oven and flip them. Return to oven for 5-10 minutes or golden brown. Optional garnish of olive oil and green onions. Serve with dip such as chili mayo.
