This is a cocktail inspired by the Manhattan and it was created in 1938 by Walter Bergeron to “honor the part of New Orleans where the antique shops and the iron lace balconies give sightseers a glimpse into the romance of another day”. Even though this is one of my favorite cocktails, we will try to take it to the next level by testing it out, followed by two simple variations: the Près du Quai with Jamaican Rum, and the A La Louisiane with absinthe! Orgeat is a syrup that is crucial for tiki and tropical cocktails. Although, as it’s essentially sweetened almond milk, it can curdle when it comes in contact with acidic juice, which is not ideal for your Mai Tai, but great for what we’ll do today. So we will take advantage of this and make Clear Orgeat, followed by a clear take on a Jerry Thomas’ classic cocktail that will show you how much better this alternative can be. It’s Cocktail Time!
