A few updates to things I didn't get a chance to cover:
1st clip: Jacob I'd work a bit more on your rolling and try to focus more on pure reaction rolling, rather than anticipatory rolling. You got punished a few times for it, and it relieves pressure on your opponent. Trust me - work on this for a few weeks and you won't believe the improvement. Also for sure your opponent was using siegbraus which given the context is trashy imo.
Also, try to avoid rolling into fast weapons like straight swords, curved swords, and daggers. You got chewed up a bit because of that.
Lastly, against a dagger that is almost impossible to reaction roll, try to space them out - force them to whiff an attack that you can counter-attack. You can move toward them as if to attack, then back away. Feinting like this over & over makes life difficult for a dagger user, and forces them to be aggressive if they want to attack, which increases the risk of trades for them.
3rd clip (Edy): When somebody like a sunbro is going for consistent walk-up parries, it's worth trying for a run backstab, at least sometimes. That will help discipline the # of attempts and will sometimes remove them from the fight.
