A tour through another one of my classic butchery books.
...The Douglas`s Encyclopedia. The Standard Book Of Reference For The Food Trades. 3rd edition, printed in 1927.
This has to be one of the most comprehensive piece of work i have ever read or seen on the butchery trade. Set out in alphabetical order, it covers everything. A lot of these methods and practices are gone forever, never to be seen, or done again, so it sure is good that books like (although rare) physically exist, to remind us of what came before in the noble art of butchery. I also i show a few bits of vintage butchery equipment as seen in the book from my personnel collection. All in all, its a fantastic look at a bygone era, in a trade that was at its height and flourishing. Enjoy....
