Ingredients:
Cashew Paste
CASHEW | काजू 12–15 NOS.
HOT WATER | गरम पानी AS REQUIRED
Vegetable Prep
ONION | प्याज़ 1 MEDIUM SIZED
TOMATO | टमाटर 1 MEDIUM SIZED
GINGER | अदरक 2 INCH
GARLIC | लहसुन 15 CLOVES
GREEN CHILLI | हरी मिर्च 3 NOS.
Gravy
OIL | तेल 2–3 TBSP
CUMIN SEEDS | जीरा 1 TSP
MUSTARD SEEDS | राई 1/2 TSP
HING | हींग 1/4 TSP
SALT | नमक TO TASTE
TURMERIC POWDER | हल्दी पाउडर 1 TSP
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TSP
CORIANDER POWDER | धनिया पाउडर 1 TBSP
GARAM MASALA | गरम मसाला A PINCH
HOT WATER | गरम पानी A SPLASH
MILK | दूध 2 CUPS
SALT | नमक IF REQUIRED

THICK SEV / GATHIYA | मोटी सेव / गठिया 2 CUPS / 120 GRAMS
ROASTED KASURI METHI | भुनी कसूरी मेथी A HANDFUL (CRUSHED)
GARAM MASALA | गरम मसाला A PINCH
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)

Method:
Start by soaking the cashews. Add the cashews to a bowl and pour hot water over them. Cover with a lid or plate and let them soften while you prepare the rest.
For preparing the vegetables, roughly cut the onion and add it to a string chopper. Finely chop it and transfer it to a bowl.
Next, roughly cut the tomato as well, put it into the same string chopper, chop finely, and transfer it to a separate bowl.
Roughly cut the ginger and green chillies. Add ginger, garlic, and green chillies to the chopper and finely chop them together.
Take a kadhai and heat it on high flame. Add oil and let it heat properly.
Once hot, add cumin seeds and mustard seeds and let them crackle.
Add the chopped ginger-garlic-chilli mixture and sauté nicely until the raw aroma disappears.
Add hing and immediately add the chopped onions and cook the onions until they soften and just start to change colour.
Once softened, add the chopped tomatoes. Add salt, turmeric powder, Kashmiri red chilli powder, coriander powder, and garam masala. Mix well. Add a splash of hot water and cook the masala properly until the oil separates.
Once the oil separates , add a splash of hot water and lower the flame.
Drain the soaked cashews and grind them into a fine paste with a splash of water. Add this paste to the kadhai and mix well.
Cook over high flame for a few minutes until the masala starts leaving the sides of the pan.
Add a little hot water and stir. Keeping the flame low, add milk and mix properly. Increase the flame and bring it to a gentle boil. The gravy will start looking creamy and slightly thick because of the cashew paste. Taste and adjust the salt if required.
Add the thick sev or gathiya and mix gently. Let it simmer briefly so the sev absorbs the flavour but doesn’t become overly soft.
Finish with the crushed roasted kasuri methi, a pinch of garam masala, and fresh coriander. Mix gently.
Our creamy, delicious Doodh Sev Bhaji is ready.
While serving, you can optionally drizzle fresh cream and add a small knob of butter, and some fresh coriander.
Serve it with tandoori roti or any bread of your choice.
