This one took me a few tries, but actually FEWER than the Twin Dragonriders, which I've always taken as one of the easiest boss fights in the game. I guess it's just hard to take on a double boss with no health, stamina or i-frames. Go figure. For the Looking Glass Knight use a blunt weapon like a mace for maximum impact (see what I did there?) Supposedly he can be poisoned but I didn't test it out. Mace with some magic goo that didn't last long. It didn't matter, though.
