June is Dairy Month, and 2026 is the International Year of the Woman Farmer, so we have two great reasons to celebrate today. Coborn’s Health and Nutrition Manager Macey Brickweg joins us to highlight women dairy farmers in Minnesota and share some delicious recipes featuring local dairy.

Protein Brûlée

PREP TIME: 10 min | COOK TIME: 5 min | SERVES: 1–2

Ingredients:
• 1 c. full-fat cottage cheese
• 1–2 Tbsp. maple syrup or honey
• Pinch of salt
• 1–2 tsp. sugar, for caramelizing the top

Optional additions:
• Splash of vanilla
• Cinnamon or cardamom
• Fresh orange zest

Directions:
1. Add cottage cheese, maple syrup and a pinch of salt to a blender. Blend until completely smooth and creamy — aim for a custard-like texture, not curds.
2. Transfer to a shallow dish or ramekin and refrigerate for 30–60 minutes.
3. Sprinkle a thin, even layer of sugar across the top.
4. Using a kitchen torch, melt the sugar until it bubbles and turns golden, forming a crisp top layer. No torch? Place under the broiler for 1–2 minutes, watching closely so it doesn’t burn.
5. Allow the sugar to harden for 1–2 minutes, then tap gently with a spoon to crack the glassy top.

Advice:
• Stir in any optional additions during the blending step for best results.
• Keep a close eye when using the broiler — the sugar can go from golden to burnt quickly.


Cottage Cheese Egg bites

PREP TIME: 10 min | COOK TIME: 23–25 min | SERVES: 12

Ingredients:
• 7 large eggs
• 1 c. cottage cheese
• 1 c. shredded cheese of choice
• Pinch of salt
• ¼ tsp. black pepper
• Breakfast sausage or bacon bits, optional
• Cooking oil spray

Directions:
1. Preheat oven to 325°F.
2. Place a pan of water on the lower rack to help egg bites stay moist.
3. Crack and whisk eggs together in a bowl.
4. Add cottage cheese, salt, pepper and any optional ingredients.
5. Spray a 12-cup muffin tin with cooking oil spray.
6. Fill all 12 muffin cups with the egg mixture.
7. Top each cup with shredded cheese.
8. Place muffin tin on the upper rack and bake for 23–25 minutes.
9. Insert a toothpick to check for doneness before removing from oven.


Greek Yogurt Pizza Dough

PREP TIME: 15 min | COOK TIME: 15–20 min | SERVES: 2–4

Ingredients:

Dough:
• 1 c. flour, plus 1–2 Tbsp. for dusting
• ½ c. plain Greek yogurt
• ½ tsp. fine sea salt
• 1 tsp. baking powder
• 1 Tbsp. melted butter

Optional seasonings:
• Garlic powder
• Onion powder
• Crushed red chili flakes
• Oregano
• Italian blend

Toppings:
• 6 oz. jar pesto, use as much as desired
• Spicy sausage, browned
• Ripe tomato, thinly sliced
• Fresh mozzarella, thinly sliced or shredded

Add after baking:
• Balsamic glaze, drizzled
• Fresh basil

Directions:

1. Preheat oven to 400°F.
2. Lightly oil or spray a pizza pan with cooking spray. Use parchment paper if using a perforated pan.
3. In a large bowl, combine flour, Greek yogurt, salt, baking powder, melted butter and any optional seasonings.
4. Mix with a spoon until crumbly, then use your hands to form into a dough ball.
5. Lightly flour your work surface and knead dough for a few minutes until smooth. Add 1 Tbsp. flour at a time if too sticky, or a small splash of water if too dry.
6. Flatten and roll dough out into your desired shape. Roll thinner for a crispier crust.
7. Transfer crust to prepared pan and pre-bake for a few minutes before adding toppings.
8. Remove from oven and add toppings.
9. Bake for 10–15 minutes or until cheese is melted and crust is golden.
10. Drizzle with balsamic glaze and top with fresh basil before serving.

Advice:
• Use plain Greek yogurt, not Greek-style yogurt, which is thinner and higher in water content.
• Pre-baking the crust before adding toppings helps achieve a golden, slightly crispy base.
