You can tell a lot about an espresso machine in the first five minutes.
Mostly whether you’re waiting on it… or it’s waiting on you.

Early morning. Cold start. You flick it on, expecting the usual wait — but within a couple of minutes, it’s already telling you it’s ready. Not fully ready, though. Not in the way that actually matters. The group head’s still catching up, the portafilter still holding onto the cold. It’s a small reminder that good coffee doesn’t rush — even when the machine tries to.
So you give it time.
Five minutes. That sweet spot where everything settles. Heat stabilises. Metal warms through. And suddenly, you’re not just making coffee — you’re setting a baseline.
Today, it’s simple: a long black and a latte. Same coffee. Same dose. Same machine. Two completely different outcomes.
A light roast Colombian, ground on the Varia VS3. Twenty grams in. But the real shift happens in the ratios. One shot stretched longer — around 1:2.5 — opening it up for the long black. The other cut shorter — tighter, more concentrated — built for milk.
It’s one of those subtle adjustments that changes everything.
The Fellow Series 1 leans into that control. Not in a loud, over-engineered way — but in small, thoughtful decisions. Volumetrics that actually land where they say they will. Profiles you can set once and trust. A screen that doesn’t just show numbers, but tells a story — pressure rising, tapering, settling into the extraction.
You start to watch it differently.
Pre-infusion. Ramp up. That moment where pressure peaks, then gently drops away. It’s not just data — it’s feedback. A quiet conversation between the machine and the coffee.
And when it hits its mark — 50 grams in the cup, clean cut-off — you realise how much mental load that removes. You’re not chasing the shot. You’re observing it.
Of course, it’s not perfect. The puck comes out a little wetter than expected. Slightly messy. One of those quirks you notice more because everything else feels so dialled in. But it doesn’t really matter when the cup delivers.
Because it does.
Then the shift — same beans, same profile — but cut earlier. Around 40 grams. The difference is immediate. Tighter, heavier, more concentrated. Built to hold its own against milk.
And this is where the machine leans into a different kind of ease.
Steaming becomes less about guesswork and more about guidance. A temperature probe doing the thinking for you. Real-time feedback. No second-guessing, no hovering your hand under the jug trying to feel that vague moment before it goes too far.
You just… let it work.
Milk stretches. Rolls. Settles into that glossy, silky texture you’re always chasing. And when it hits temp, it stops. Clean. Automatic purge. Workflow stays uninterrupted.
It’s the kind of experience that feels almost too smooth — like it’s doing more than you are.
But that’s the point.
Because what you’re left with isn’t just two drinks. It’s two expressions of the same coffee. One opened up, layered, diluted into clarity. The other dense, sweet, structured — wrapped in milk.
Same input. Different intent.
And somewhere in that process, you realise this isn’t really about the machine.
It’s about removing friction.
Making space to notice things again — temperature, flow, timing, texture. The small details that usually get lost when you’re rushing through a morning routine.
This just slows it down enough.
Not in time — but in attention.
And maybe that’s the real value here. Not just precision, or features, or profiles. But a workflow that lets you step back slightly… and enjoy the act of making coffee again.
Because at the end of it, you’re not thinking about pressure curves or brew ratios.
You’re just standing there, holding two cups — and that feels like enough.
