There's just something about Cuban food that strikes my fancy. This is super easy in the crockpot and is amazing over rice or wrapped up in a tortilla.
Ingredients:
2 1/2 pounds ground beef
1 tablespoon beef tallow
1 red bell pepper, diced
1 white onion, diced
3 cloves garlic, minced
1 cup cilantro, minced (or parsley if you'd prefer)
1 tomato, diced
8 oz can tomato sauce
1 cup pitted green olives (used a cup of the juice too!)
1 1/2 teaspoons ground cumin
1/4 teaspoon garlic powder
2 bay leaves
1 cup water
salt and pepper to taste (I used about a teaspoon each)
Additional Options: Capers, Raisins
Directions:
1. In a large skilled, heat the tallow over medium high heat. Add hamburger and brown. Add onions and peppers and stir well during the last few minutes of browning. Add salt and pepper and stir. Drain and add meat to slowcooker.
2. Add the other ingredients to the slowcooker. Consider using a cup or so of the olive juice. It makes a difference!
3. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Consider adding a bit more spices/salt/pepper at the end if the tastes seem a little muted. That can happen in a slowcooker.
Serve over rice.
