In order to create even stitches in crochet, you need to maintain an even tension on the yarn. The yarn needs to flow evenly from the ball or skein of yarn, but have enough tension to be able to create stitches. To accomplish this, you wrap the yarn around your fingers and hand so that you can both hold it firmly, as well as release it slowly.
There are 2 main ways of holding the yarn, on the outside of your hand, or on the inside. Try them both out, and see which way feels more comfortable for you. If necessary, modify the techniques to suit you, or change them completely. There really is no right or wrong way as long as it accomplishes the goal.
The nice thing about videos is that you can watch them at your own pace. If there is something that isn't quite clear to you, pause the video, rewind and watch it again.
