I spent a weekend building a first person hunting game using Unity and (mostly) Free and Open Source assets. This video covers the hours 4 through 10, but since I'm providing the code as open source it will be much quicker for you.
I couldn't find an open source alternative to my beloved Neo FPS and I used Emerald AI for a quick AI solution.
The code I wrote for this is available, as open source, from github.com/TheWizardsCode/NeoFPS_UnofficialExtensions.
