Gooey, golden and totally comforting, this Creamy Mac and Cheese with an Italian Sausage Twist takes classic mac and cheese to the next level. The perfect side dish or a one pot meal.

☐ 1 Box (1 lbs) Cavatappi or elbow pasta
☐ 1/2 Tablespoon salt
☐ Slight drizzle of olive oil while it drains
☐ 2-3 Tbsp olive oil
☐ 1/4 onion (finely diced)
☐ 1 Lbs. ground Mild Italian sausage
☐ salt/pepper to taste
☐ 2 Tbsp avocado oil
☐ 4 Tbsp (half stick) unsalted butter
☐ 1/2 Tbsp garlic POWDER
☐ 1/2 Tbsp Italian seasoning
☐ 1 Tsp basil
☐ 1/2 Tbsp smoked paprika
☐ 1/4 cup flour
☐ 1 Tbsp Dijon mustard
☐ 12 oz. can Evaporated milk
☐ 3 cups heavy cream
☐ 1 cup milk
☐ 8 oz. cheddar cheese
☐ 8 oz. Colby/Monterrey Jack cheese
☐ 8 oz. Mozzarella cheese
☐ salt/pepper to taste
CHEESE FOR CENTER & TOPPING:
☐ 8 oz or less Cheddar
☐ 8 oz or less Colby/Monterrey Jack
