I encountered this boss after close to an hour of wandering around the Mibu Village, getting spooked by constantly spawning zombie villagers and one not-so-friendly ghost. The whole place felt a bit rough, so I decided I'll backtrack and check other routes for now, but before that I wanted to at least take down this one boss. While I was at it, I found out that her attacks are possible to avoid by simply running, so I decided to approach it like one of my no rolling challenges in Dark Souls and give myself a few restrictions with this as the main one (meaning only running, no step-dodging, jumping, blocking, deflecting or any other regular means of avoiding her attacks). Note: when running while locked on to enemies, player character will start his run with what looks like a step dodge regardless of the player holding the button instead of tapping it, which can be seen in my video as well. Regardless of that, all of her attacks are avoidable by simply running, I made sure to show it as well as I can by only initiating the run for the sake of spacing, avoiding her incoming attacks while alredy mid-run. I did it because I don't know if that dodge animation at the start of locked on run has any i-frames and the main point of this video was to demonstrate that it isn't needed for this boss.

Also, for people who want to give themselves a bit of help during this fight: up to some point the Monk can be affected by a snap seed, she'll receive some good damage and get stunned for a moment if you use it, allowing you to get a few extra hits in. I also heard that divine confetti supposedly boosts your damage in this fight, but I'm not 100% sure about that as I didn't try it out myself. If anyone knows whether it's true or not, feel free to correct me if it isn't.

The full list of restrictions for this fight is: No damage taken, no step-dodging, no blocking, no deflecting, no jumping, no prosthetic arm tools, no consumables and a curse from Demon Bell that boosts enemy and boss strength. My character has 14 vitality and 3 attack strength (I used 2 boss memories). I'm playing on PC at 1440p
