...So during the harvest celebrations, when we roast the pig in the banana stem oven, The girls wanted to make full use of it & decided to cook Khan lam.
.
...Khan lam is basically sweet sticky rice cooked in sections of bamboo. The rice is first soaked then loaded into sections. Next sweetened coconut milk is poured in until they are nearly full then the ends are stopped with folded banana leaf. Now the pieces of bamboo are lent against a frame Next to the coals  and slowly cooked for around an hour & a half. Now they are left to rest until they are cool enough to handle after which the outer wall of bamboo is split away to reveal the cylinders of cooked rice.

...It has a firm chewy texture, a bit like a set rice pudding, & the taste ? Well sure it was delicious & the whole lot got eaten that evening.

...This technique can be applied to many other ingredients & I saw it used in Laos to cook eels once too.
