Binagol is a classic kakanin that we tried in Leyte that is made with grated gabi and a rich coconut latik filling. 🥥 Steamed inside coconut shells and wrapped in banana leaves, it is earthy, creamy, and not overly sweet.

BINAGOL
Ingredient:
Latik:
1 cup coconut cream
1 cup brown sugar
ÂĽ tsp salt
2 pcs egg yolks

Binagol:
2 cups finely grated gabi
½ cup glutinous rice flour
â…“ cup condensed milk
3 tbsp melted margarine
1 pc egg

Procedure:
1. In a pan, combine coconut cream, sugar, salt, and egg yolks. Bring to a boil then lower heat. Cook until thickened. Set aside to cool.
2. Combine gabi, rice flour, condensed milk, margarine, and egg until uniform in color. Place in shaved coconut shells and fill the middle with coconut filling before covering with binagol batter. Wrap in banana leaves and tie with twine to secure. Steam for 45 minutes or until fully-cooked
