Ultimate Sous Vide Leg of Lamb | Stress-Free & Stunning Roast
We’ve taken the stress out of cooking lamb this Thanksgiving Holiday Season. Perfectly tender, rosy, and packed with flavor—this sous vide leg of lamb is all about precision, patience, and payoff.
You’ll need:
• 1 whole leg of lamb
• 80 g mustard powder
• 15 g kosher salt
• 10 g freshly ground black pepper
• Neutral oil for frying
• 50 g mint, 65 g parsley, 9 g rosemary
• 30 g mustard seeds, 30 g caraway seeds
• 500 ml balsamic vinegar
Steps:
1. Heat sous vide bath to 131°F / 55°C for medium-rare.
2. Separate rump from leg, score fat, and rub with mustard, salt, and pepper.
3. Vacuum-seal and cook sous vide for 24 hours.
4. Fry mint, parsley, and rosemary in 300°F / 149°C oil until crisp.
5. Fry mustard and caraway seeds at 325°F / 163°C; cool and combine with herbs.
6. Reduce bag juices with balsamic vinegar to make glaze.
7. Roast lamb at 450°F / 232°C until the fat cap is browned and crisp.
8. Glaze, garnish with fried herbs, slice, and serve.
Key tips:
• 131°F / 55°C gives tender, rosy meat—go higher for more doneness.
• Fry herbs in small batches for even crisping.
• Reducing the bag juices with balsamic gives deep, glossy flavor.
• Crisping in the oven adds texture and contrast to the sous vide tenderness.

![How to French and Truss a Pork Roast
A rack of pork, the “prime rib” of the pig, is an often-overlooked celebratory roast beast cut that’s every bit as delicious as the one that comes from a steer—that is, if it’s prepared correctly.
Getting the right cut and getting it trimmed, frenched, and trussed correctly is super important. In this video, our very own Nicholas Gavin demonstrates how to take a hefty 10-bone bone-in rack of pork and butcher it beautifully, and the technique is applicable to any sized rack of pork you can get your hands on.
Our method is a little more meticulous than some of the other ones out there, with the goal of producing the prettiest pork rack you’ve ever seen—pristine china-white rib bones poking out of a hunk of meat with clean lines that could’ve been etched by a laser.
Once you’ve got your pork roast trussed, it’s ready to be cooked using our recipe for Glazed Pork Roast. And even if you’re going to get a butcher to do the trimming, frenching, and trussing for you, you’re going to want to watch Nick do his thing, because our method yields a single intact hunk of the intercostal muscles (the rib meat), which is often called “the chain,” a gloriously rich slab of meat that we cook up alongside the roast for an incredible, unique piggy treat.

![How to Turn Cheap Pork Shoulder into the Ultimate Pork Chop | ChefSteps
The problem with cooking pork chops is no matter how well you cook them, they’re still pork chops. Classic loin chops are usually super lean, kind of bland and uninteresting.
With sous vide, there’s another way: the pork shoulder chop.

A pork shoulder, cooked at a low temperature for more than 16 hours, can be chilled and cut into “chops” that are way more interesting and tastier than any pork chop you can buy at the store. All the connective tissue in the shoulder melts into lip-smackingly juicy gelatin, and the chop has a texture reminiscent of great steak: meaty, with a delicate, tender chew.
