The Basque cheesecake, created by chef Santiago Rivera at Restaurant La Viña in Donostia-San Sebastian, is one of the most iconic cheesecake innovations thanks to its “burnt” top and its creamy and custardy center. In this video, chef Nicholas Gavin shows you how to execute the preparation flawlessly. By resting the batter, using a two-stage baking process, and pulling the cheesecake out of the oven before it hits the target internal temperature, Nick demonstrates how to get that deeply burnished—not burnt!—top and the perfectly cooked interior, every single time.

![How to Make Chinese Dumplings (Jiǎo Zi)
Chinese dumplings (jiǎo zi) come in all shapes and sizes, and they can run the gamut from simple, rustic preparations to super-refined works of culinary art. In this video, chef Tim Chin demonstrates how to make Northern-style pork, shrimp, and cabbage dumplings. Beyond that, he gives you options: You can choose to use store-bought dumpling wrappers or make the wrappers yourself using our dialed-in dough formula, and you can cook the dumplings by steaming them, boiling them, or pan-frying them so they’re crisp on the bottom and silky and tender on top.
This video is just the tip of the dumpling iceberg we have on our website. For everything you could ever want to know about making dumpings at home, including video demonstrations of folding and pleating techniques for 12 different shapes, check out our free Ultimate Guide to Chinese Dumplings (Jiǎo Zi): https://www.chefsteps.com/activities/guide-to-chinese-dumplings

![How to Make Taiwanese Fried Chicken—Two Ways!
Taiwanese fried chicken typically takes two forms: bite-sized, flavor-packed popcorn chicken (yán sū jī) and a bigger-than-your-face chicken cutlet (dà jī pái). The ingredients and method for preparing the two variations are mostly the same, but the popcorn chicken is made with bits of chicken thigh and the chicken cutlet is made from breast meat. The chicken is marinated in soy sauce, mijiu (a fermented rice wine), white pepper, five-spice powder, and then it’s dredged in coarse sweet potato starch before it’s double fried, which produces the distinctive ultra-crispy crust.
In this video, chef Tim Chin demonstrates our two foolproof recipes, showing you how to butcher the chicken, marinate, dredge, and fry the chicken so it’s crispy on the outside and juicy and tender within.

![The Crispiest and Crunchiest Cantonese Roast Pork Belly (Siu Yuk)
Roast pork belly (siu yuk) is one of the iconic preparations in the larger category of dishes known as siu mei—a collective term for meats roasted over an open fire. With its tender and luscious layers of meat and fat and its super crunchy and crispy cap of skin, you’ll find it at Chinatown barbecue shops hanging alongside lacquered roast duck, soy sauce chicken, and char siu, and sliced into neat rectangles at good dim sum places.
In this video, chef Tim Chin demonstrates how home cooks can use sous vide to cook skin-on pork belly to produce juicy, melt-in-your mouth meat, and how to guarantee that the meltingly tender skin can be transformed into a chicharron-like crust.
