✨ Kangaroo Skewers with Bush Tomato Rub
• Cut kangaroo into bite-sized cubes
• Toss with olive oil and bush tomato spice rub
• Thread onto skewers
• Grill hot and fast, 2–3 minutes each side (keep it medium-rare)
• Finish with saltbush or extra spice
✨ Quandong & Garden Salad with Rosella Dressing
• Combine fresh greens, cucumber, onion, tomatoes, and macadamias
• Add plump quandongs (the “wild peach” of the desert)
• Whisk rosella syrup, olive oil, and vinegar into a dressing
• Drizzle just before serving
