Darwin is known for a few things. Epic sunsets, rich culture and seriously good barra. Shannon from @aboriginalbushharvest, a proud Larrakia man, grew up surrounded by one of the best backyards in Australia, where food is deeply connected to culture, Country and tradition.

This recipe brings that to life. Simple, powerful, and packed with native flavour πŸ‘‡

✨ Paperbark Barramundi
β€’ Season the fish with native herbs, ginger, garlic and lemon
β€’ Stuff with lemon myrtle and onion
β€’ Wrap in paperbark and secure with baking paper
β€’ Cook low and slow on the BBQ, about 40 minutes each side
β€’ Unwrap at the table for that smoky, fragrant hit
β€’ Finish with shallots, karkalla and parsley
β€’ Serve with rice

If this has you curious about native ingredients and Aboriginal food experiences, there’s a whole world to explore in the Territory 🌿
