RECIPES:
Sweetcorn & Cheddar Tart: Serves 4 - 6
- 115g chilled unsalted butter
- 165g plain flour & extra for dusting
- 1/2tsp salt
- 2/3 tbsp cold water
- 120g tinned sweetcorn, drained
- 1tbsp olive oil
- 1 red onion, diced
- 6 medium free range eggs
- 80ml double cream
- 120ml whole milk
- 1/2tsp salt
- 120g mature cheddar, grated
- handful of parsely
- 1tsp chilli flakes
Quesadillas with Chimichurri: Makes 4
- 8 soft tortilla wraps
- 1 white onion, diced
- 1tbsp olive oil
- 1 clove of garlic, diced
- 1 red bell pepper, diced
- 1 red chilli, chopped
- 100g mature cheddar, grated
- 1 can of kidney beans in chilli sauce
- 1 can of mixed beans in water
- large handful of coriander
- 1 garlic clove
- 3tbsp olive oil
- 1tsp red wine vinegar
- salt and pepper to taste
Lemon & Chilli Spaghetti: Serves 2
- 120g dried spaghetti
- 1tbsp olive oil
- 25g unsalted butter
- 2 lemons juiced & zested
- 1tbsp chilli flakes
- 3 garlic cloves
- 6-8 basil leaves
- 2tbsp salt for the pasta water
- 300ml water
