BUTTERNUT SQUASH SOUP: Serves 4
- 1 butternut squash, peeled and chopped into chunks
- 1 yellow pepper, chopped
- 1tbsp olive oil
- 2 garlic cloves
- salt and pepper
- 1 red onion, diced
- 1 thumb-sized piece of ginger
- 1 tbsp olive oil
- 500ml vegetable stock
- 1tsp smoked paprika
- 1tsp ground cumin
- 1 can of coconut milk
- double cream and chilli flakes to serve
SUPER GREENS PASTA: Serves 2
- 150 g dried spaghetti
- 4 cloves of garlic
- 200g (large handful) cavolo nero
- 30g parmesan cheese, vegan alternatives can be used
- 30g cream cheese (can use plant based if you prefer)
PRAWN EGG FRIED RICE: Serves 2
- 1 cup basmati/long grain rice
- 150g chestnut mushrooms
- 1 green pepper, sliced
- 1 red chilli, chopped
- 1 thumb-sized piece of ginger, grated
- 2 garlic cloves, grated
- 1tbsp sesame oil
- 150g pack of fresh prawns, optional
- 1tbsp light soy sauce
- 1tbsp teriyaki sauce
- 2 fried eggs
- 2 tsp sesame seeds
