🇨🇴 COLOMBIA | BANDEJA PAISA

One nation. One dish. One football story.

Colombia on one plate: steak, chicharrón, homemade chorizo, beans, rice, arepa, plantain, avocado and egg.

Recipe 👇

Chorizo: Mix 250g pork mince, 100g pork fat, 150g beef mince, 4 garlic cloves, 2 tsp sweet paprika, 1 tsp smoked paprika, 2 tsp cumin, 2 tsp oregano, 2 tsp salt, 2 tsp black pepper, 6 tsp white vinegar and 4 tbsp cold water. Chill, shape and fry.

Beans: Fry ½ onion and 1 garlic clove. Add 2 x 400g tins pinto beans, 500ml beef stock and ½ tsp cumin. Simmer until thick.

Chicharrón: season and rest fry at 140 for 10 mins then 190 until skin is blistered and crispy

Carne molida: Fry 150g beef mince with ¼ onion, 1 garlic clove, ½ tomato, ½ tsp cumin, salt and pepper.

Arepas: Mix 120g Harina PAN, 150ml warm water, ½ tsp salt and 1 tsp oil. Rest 5 mins, shape into 2 discs, fry 5–6 mins each side.

Serve with 150g rice, 1 steak, 1 fried plantain, 1 avocado and 2 fried eggs.
