Recipe:
1 Cup Butter or less ½ Cup sugar
2 Eggs 1 Tsp almond extract
2½ Cups Flour 2 Tsp Baking Powder
1 Cup evaporated milk, or milk of choice ½ tsp sea salt
1 Cup Halved Glacé Cherries ( 1/4 cup flour before adding to mixture ) or maraschino cherries

Method:

Cream together butter and sugar.

Mix in almond extract.

Add eggs one at a time, mix well until light and fluffy.

In another bowl sift or mix together flour, baking powder and sea salt.

Fold dry ingredients with creamed mixture, don't over mix, then slowly alternate  room temp milk to your mixture with dry ingredients until creamy.

Fold cherries that have been rolled in flour to your batter. Grease one bunt pan or two loaf pans, or pans of choice. Take a few red or green cherries and put on the top of cake before putting it in the oven.

Bake in a 350°F, Preheated oven for 45 minutes to an hour depending on your oven, before removing from your oven check the cake first with a toothpick if it comes out dry it's done if wet close oven door and leave for another five minutes or so . Don't over bake your cherry cake , this will make your cake dry.

Bonita’s Tips:
Remove cake from your oven let sit in cake pan for 5 to 10 minutes before removing it from the pan.
You may need to run a knife around the sides to remove from pan if stuck.
Use room temperature milk.
Use vanilla if you don’t like almond extract.
