INGREDIENTS
Raw cashews, soaked overnight (a minimum of 6 hours)
water
a pinch of salt

DIRECTIONS
Drain and rinse cashews. Place them in the bowl of your blender with enough water to cover them by 3/4". Blend on high for 1-5 minutes, adding water if necessary.
Store in your refrigerator for 4 days or pour it into ice cube trays and freeze it.

This makes a wonderful substitute for dairy cream in soups, pasta dishes, milkshakes and smoothies or thickened (just blend with less water) for a cheese substitute in enchiladas or lasagne.
