Eating healthfully sometimes can feel expensive or time consuming. Here is how I prepare some of the most inexpensive produce items for my daughter's lunchbox: celery, cabbage, cole slaw mix, frozen peas, cucumbers, tomatoes, onions and garlic, potatoes, squash and sweet potatoes.
