So I've been trying to beat this boss as a (not very effective) way to relieve stress in between my attempts at no sprinting Nameless King.
The part with the Gravetender can be won pretty much by just running away from him in a straight line and hitting him right after he attacks, his lunges can also be countered by quickly positioning yourself behind him and backstabbing. The main things most important for the success of the next part of the fight are luring him to the back of the arena (so you have time to get ready after the Greatwolf appears) and killing him as fast as possible after taking more than half of his health, so he doesn't gang up on you with his pupper.
The second half is a bit less predictable, the doggo can move around a lot and take you out before you manage to change your position to a safer one (at 1:40 I got really lucky that his charge attack didn't kill me on the spot, a step in a wrong direction and it would've ended there). The safest strategy is to stay behind pillars and hit him (preferbly with charged heavy attack if you've positioned yourself just far enough to be sure that you won't get hit) when he does the double bite attack, then go crazy on him once half his healthbar is gone and he starts transitioning into his second stage. You want to get rid of him before he finishes his ice breath, because he'll most likely follow it with a charge.
