Champagne Slate is a fun celebration you can do as 2nd AC / clapperloader at either every 100 slates or 111 slates.
But where does it actually comes from? Well it's from champagne rolls as in the past every 100 rolls will actually open a bottle of champagne to celebrate it. As film rolls only hold several minutes per roll, they went through a lot of rolls to through out the production.
But nowadays most production are often digital and we uses Slate as there are a lot of camera positions that could easily reach those high numbers especially on feature film productiions.
It's just a fun filmmaking tradition to have bit of extra fun on set.
