Thanks to Carol A for another delicious Greek recipe! Kotopoulo Kapama (or cinnamon chicken) is delicious and was a very welcome dish for my lunch this week. It's super easy in the slowcooker and the smell is wonderful!
Ingredients:
6-8 chicken thighs
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon pepper
1 large onion, finely chopped
3 cloves garlic, minced
1 28 oz can of tomato sauce
1 teaspoon dried oregano
pinch of crushed red pepper flakes
2 cups frozen peas
fresh chopped parsley
slices of feta cheese
Directions:
1. Add all but the feta and parsley to the slowcooker and stir well. Ensure chicken is submerged in the ingredients as much as possible. Cook on high 4-6 hours.
2. Add the frozen peas with one hour to go and stir in.
3. Serve over rice. Add chopped parsley and feta cheese slices and serve.
