I've been saving this one! I do love a "saucey" pasta and this one delivers. Sprinkle with some parmesan cheese and lemon juice and you'll have a tasty pasta dinner!
Ingredients:
2 tablespoons salted butter
2 tablespoons extra virgin olive oil
3 large yellow onions, sliced very thin
1/2 teaspoon salt and pepper (more or less to taste)
1/2 cup dry white wine
2 tablespoons parsley, finely chopped
1/3 cup grated parmesan cheese
1-2 tablespoons lemon juice (optional)
Desired pasta cooked and drained (save pasta water for sauce)

Directions:
1. Add onions, butter, and olive oil to a large pot.. Cover and cook on low heat until onions are softened (about 10-15 minutes).
2. Remove lid, turn heat up to high. Add salt and pepper and stir onions until they are a golden brown (about 5-7 minutes).
3. Add wine and parsley and continue cooking over high heat. Reduce the liquid down by about 2/3.
4. Prepare pasta according to directions. Drain water, reserving 1-2 cups of the pasta water.
5. Add onion mix to blender. Add a little pasta water and blend until desired consistence. I ended up adding about 2 cups to mine.
6. Toss pasta with your onion sauce. Garnish with grated parmesan cheese and add a little lemon juice for the little extra zing.
