Steven Raichlen once said in this video linked here; that pork’s steaks are found in Kentucky and Saint Louis and no where else. That’s just not so. We eat a lot of pork steaks in South Louisiana. These are quite common around these parts. They are basted with, simmered in, and served under copious amounts of a Cajun style Barbecue Sauce such as Pig Stand or Jack Miller’s.
