These sausage cups are quick and easy breakfast idea that can be made ahead of time and pop in the microwave when you are pressed for time. It can easily be adjusted to your family's needs.
Sausage roll or prepackaged sausage patties
Eggs
Cheese
Salt and pepper
Spray a muffin tin with vegetable spray. Using wax paper worked the best, I sprayed it with vegetable spray and the sausage did not stick. Shape the sausage into patties big enough to cover the bottom of the muffin pan and overlap a little.
I used 6 eggs and 8 prepackaged sausage patties. Break the eggs in a bowl stir and add a little milk or cream to make them fluffy. Pour each sausage cup about 1/2 full of the egg mixture, add salt and pepper to taste, and cheese on top. Bake for about 20 minutes or until the eggs are cooked thru.
I always use my own salt seasoning so is easy to make, and it tastes great.
2 parts salt
1 part pepper
1 part garlic powder
